Mushroom Frittata & Smoked Salmon

Just a simple breakfast, this was. One thing I'm not overly fond of is the typical "kitchen sink omelet," i.e., the notion that the addition of more and more ingredients makes it better and better. Not for me.

Alternatively, how about a single ingredient omelet or frittata? A couple of my favorites are onion as a lone ingredient, or mushroom. In this case, the mushrooms were slowly sautéed in sweet organic butter, then the egg mixture added, and into the oven at 350 for about 20 minutes. At the end, three pats of butter melted on top.

And it went very nicely with some smoked salmon and crème fraîche. There's an extremely low-carb breakfast for ya.
