I think the potato thing has brought me to a place.
I like both rice and potatoes, fixed myriad ways, and so after all the experimenting, getting tired of doing a “Potato Diet,” wondering WTF—because this goes counter to everything I’m about (strict context of experiment is fine). OK, it only took a few days to confirm: zero doubt; eat only potatoes, as much as you want, only with very little added fat or protein, you’ll drop weight like a rock, and fast. Probably, as has been in comments, resistant starch accounts for the apparent disparity between caloric deficit and actual weight loss.
Who would have imagined? An actual real demonstrable and scientifically supported “metabolic advantage.” Not for low carb. Not for high fat. High protein does have a proven slight metabolic advantage upwards of 25% if your protein intake is above 50% of energy. But the big metabolic advantage? Certain starches cooked, then cooled to form resistant starch. The metabolic advantage is on the oder of 25-50%. That is, that 4 kcal per gram of carb? Nope. 2-3 kcal. Smoke it.
